Empanada Filling Ingredients: 250g-300g ground meat(pork/beef/chicken) 2 small sized potatoes, diced 1 med sized carrots, diced 4 cloves garlic, minced 1 med sized onion, minced 1/2 cup sweet skinless longganisa, diced 100g green peas 1/4 cup raisins 1-2 tbso soy sauce 30g oyster sauce(more if needed)optional salt and pepper to taste sugar to taste 1 cup water 2-3 boiled eggs, sliced cooking oil for deep fry Dough ingredients: 2 cups all purpose flour 1/2 cup butter/margarine, softened but still cold (unsalted) ubed 1/8 tsp salt 7 tbsp very cold water Filling Procedure: 1) Saute onion and garlic 2) Saute ground pork until light brown 3) Add sweet skinless longganisa, potatoes and carrots 4) Add water. Cover and simmer for 3 minutes 5) Add green peas, soy sauce, oyster sauce, salt,pepper and sugar. Mix well 6) Simmer until the liquid is almost dry 7) Add raisins and mix well 8) Set aside and let it cool Dough Procedure: 1) Combine all purpose flour and salt. Mix well 2) Add cold butter. Using a fork cut the butter into the flour mixture 3) Add cold water a tablespoon at a time.
