This simple stew is usually paired with ofada rice or unpolished brown rice( ofada rice and stew). Ofada rice is a sweet and tasty delicacy with bit of traditional flavours; ofada stew is the best stew serve with this rice, however, yam, plantain and other rice dish like basmati goes well with this sauce as well. Ofada stew is also known as ayamase stew or designer stew; it can be prepared with green bell pepper, with red bell pepper or even with the combinations of both. Bleached palm oil is also an important ingredient for making ofada stew as it is used for frying of the veggies and it adds some nice fragrance to the sauce as well. Locust beans or Iru is a type of fermented spice, it is commonly used as a taste enhancer in soups, sauces and stews and this adds some pleasant aroma to ofada stew. Ofada stew ingredients 1. (5 large green bell peppers (green Tatashe) 2. 4 large red bell peppers (optional) 3. 2 medium red onions, thinly chop 4. 3 Scotch bonnet peppers (Ata Rodo) 5. 1 kilo of assorted meat (goat meat, beef shaki and Ponmo 6. boiled eggs, as desired, optional 7. 3 Tablespoons locust beans (Iru) 8. 1½ cups palm oil 9. 1 tablespoon of ground crayfish 10. 1 cup of stockfish or dried/smoked fish 11. 3 seasoning cubes (maggi) 12.
