Smoked Mutton Mandi at home.. INGREDIENTS FOR THE SPICE POWDER Cardamom - 1 tbsp Cloves - 1/2 tbsp Coriander seeds - 1/2 tbsp Pepper - 1/2 tsp Cumin - 1/2 tsp Fennel seeds - 1/2 tsp Nutmeg - 1/2 of 1 Mace - 1 small peice Bay leaf - 1 Cinnamon - 2" piece Small piece of dry ginger Basmati Rice - 2 cups Olive Oil or any vegetable oil- 5 tbsp Coriander seeds - 1 tsp Cumin seeds - 1/4 tsp Chopped Onion - 1/2 cup Green chilies - 2 no.s Mutton - 1/2 kg Yogurt - 1 tbsp Turmeric powder - 1/4 tsp Whole spices Salt as needed Tamarind - a small ball Red chili flakes - 1 tbsp 2 piece of coal METHOD Dry roast all the spices and grind to a coarse powder to make mandi spice,keep aside. To smoke the oil , take 5 tbsp oil in a bowl and 2 tsp in another bowl , inflame a piece of coal and put into the oil and immediately cover them and let sit for 5 - 10 minutes. Soak the saffron and turmeric in little hot water,keep aside. Wash and soak the rice for 20 minutes then drain and set aside. Marinate the washed and drained mutton with 1 tbsp mandi spice , turmeric powder , yogurt and salt for 30 minutes. Pressure cook the marinated mutton by adding whole garlic , tomato ,onion , whole spices and water until done , around 5-6 whistles. Once the pressure released by itself , open the cooker , take out the mutton into a bowl , discard the garlic , onion ,tomato and measure the stock water along with normal water to cook the rice.we need 1&3/4 cup of stock water to cook 1 cup rice.Then into the mutton add 1 tsp mandi spice ,Tamarind water and red chili flakes,add little salt if needed , mix well and keep aside. To Cook The Rice Heat 1/2 of the smoked oil ,Crackle coriander seeds and cumin seeds.fry onion , green chilies until the onions are translucent. Add in the drained rice and 1 tsp mandi spice , fry for a minute, then pour in the stock water, add required salt and cook over high flame until the water almost evaporated.stir Occasionally ,then cover it and cook over low flame for 10-15 minutes.In the meantime heat the remaining smoked oil and lightly fry the mutton and keep it aside.Once the rice done make small hole in the centre and place little oil in a bowl ,drizzle the saffron water onto the rice,then place the fried mutton pieces above the rice.Inflame a piece of coal and put into the oil and immediately close the pot and wait for 5 minutes.and serve by placing the mutton above the rice..enjoy...
